Christmas Butter Cookies


Xmas Butter Cookies

1 lb butter
1 1/2 tsps lemon juice
6 egg yolks
6 cups flour
1 tsp baking powder
1/2 pint of whole cream
1 cup sugar
1/2 tsp fresh lemon rind
1/2 teaspoon salt
add a additional little bit cream

Add flour, baking powder, salt, and butter- need like pie dough- make a whole in center of dough so that the middle of the bottom of the bowl shows through.
Add sugar, egg yolks, lemon juice, cream and rind.
Kneed till blended.
Divide dough into 4 balls and place in fridge and chill for a few hours.
Roll out dough and use cookie cutters.
Bake at 325°F for about 15 minutes.



Almond Butter Cookies

1 teaspoon almond extract
1 cup butter or margarine
1/4 teaspoon salt
2 cups flour
1/2 cup sugar

Cream sugar and butter. Add extract.
Add flour and salt and mix well. Chill dough. Form into one-inch balls.
Stamp immediately with warm cookie stamp.
Bake at 325° deegre for 13-15 minutes.



Peanut Butter Cookies

Candy sprinkles
2 cups peanut butter, creamy or chunky
1/2 cup corn syrup, dark or light
1 cup confectioners' sugar
1/4 cup semi-sweet chocolate chips, melted
2 cups graham cracker crumbs

In a large bowl, combine graham cracker crumbs, corn syrup, confectioners' sugar, and peanut butter.
Mix until smooth.
Shape into 1-inch balls.
Place on waxed paper-lined cookie sheets.
Drizzle melted chocolate over balls or roll in colored sprinkles.
Store covered in refrigerator.



Pecan Butter Balls

1 cup butter or margarine, softened
1/2 teaspoon salt
2 cup flour
2 cup finely chopped pecans
2 teaspoon vanilla
1/2 cup sugar

Sift together dry ingredients. Add butter and vanilla.
Work with large spoon. Add pecans and mix well.
Shape into 1" balls and roll in additional chopped pecans.
Bake on ungreased cookie sheet in 325F oven about 25 minutes or until done.
