Christmas Surprise Cookies


Xmas Surprise Cookie

1 egg
1 cup butter
1 tsp baking soda
1 tsp vanilla
4 packages Rolo chocolates
1/2 cup white sugar
2 1/4 cups flour
1/4 cup sugar
1 cup brown sugar

Cream butter with brown and white sugars until well mixed.
Add egg and vanilla.
Mix flour with baking soda and add to batter.
Take 1 tbsp of the dough and form cup in your hand so chocolate will fit into center.
Shape dough to enclose chocolate; roll in sugar.
Place on greased baking sheet and bake 12 minutes or until cookies flatten and tops are slightly golden. Bake at 350 deegree F.
Cool on racks.


Oatmeal Surprise Cookies


2 eggs
1 1/4 cups quick-cooking oats
1/4 cup molasses
3/4 cup sugar
2 tsps baking powder
1/2 tsp salt
2/3 cup salad oil or vegetable oil
1/2 cup gumdrops
1 1/2 cups flour (sifted)

Beat eggs till well blended. Stir oil into eggs and blend in sugar till mixture thickens.
Stir in the molasses.
Sift baking powder, flour and salt together. Add to egg mixture with the oats and gumdrops.
Mix until well blended.
Drop a tsp at a time, 2 inches apart, on a greased cookie sheet.
Sprinkle a very small amount of sugar on each cookie.
Bake at 400° F 9-10 minutes.
Remove from cookie sheet immediately.



Christmas Surprise Cookies

1/2 tsp salt
1 cup brown sugar
1 cup butter, softened
1 cup sugar
2 eggs
1 tsp vanilla extract
1 tsp baking soda
milk chocolate, for drizzle
3 1/2 cups flour, sifted
1 (11 1/2 ounce) bag miniature candy bars (Snickers or Milky Way work best)
1 cup creamy peanut butter


Combine butter, sugars and peanut butter using electric mixer until light and fluffy.
Slowly add vanilla and eggs until combined.
Mix in flour, baking soda, and salt.
Cover and chill dough for 2-3 hours.
When dough is chilled, take 1 tablespoon of dough and flatten.
Place miniature candy bar in center of dough and then form dough into ball around candy bar.
Place on cookie sheet and bake at 325 deegre for 11-12 minutes.
Let cookies cool on baking rack or on wax paper.
When cooled, drizzle melted milk chocolate over each cookie.
Store in a cool place.



Cinnamon Surprise Cookies for Kids

2 eggs
1 (12 ounce) package cinnamon baking chips
1 tsp baking soda
3/4 cup brown sugar
1 cup butter (Softened)
2 1/2 cups flour
1/4 cup sugar
1 tsp vanilla
1 (3 1/2 ounce) package butterscotch pudding mix
1/2 tsp cinnamon
1 cup nuts

Mix flour with baking soda and cinnamon. Set aside.
Combine pudding mix, butter, vanilla and the sugars in a large mixer bowl; beat until smooth and creamy.
Beat in eggs one at a time.
Gradually add flour mixture; then stir in morsels and nuts.
Roll 1 tablespoon dough for each cookie and roll in the sugar cinnamon topping mixture.
Bake on an ungreased cookie sheet at 375F for 10 minutes.
