Russian Christmas Cookies

Russian Tea Cookies

1/4 tsp salt
1 cup butter
1 tsp almond extract
1/2 cup chopped pecans
1 cup powdered sugar
2 1/2 cups flour

Preheat oven to 400° F.
Cream almond extract, sugar and butter.
Gradually stir in flour and salt.
Add nuts and stir until well blended.
Roll dough into teaspoon sized balls.
Place on greased cookie sheet.
Bake at 400 deegree F for 11 to 12 minutes, or until bottoms are light golden color.
While still hot roll cookies in additional powdered sugar.

Christmas Russian Butter Cookies

2 1/4 cups sifted flour
1/2 cup confectioners' sugar, to coat
1 cup butter, softened
1 tsp salt
3/4 cup chopped walnuts or pecans
1 tsp vanilla
1/2 cup confectioners' sugar

Preheat oven to 400 deegre.
Beat well the butter and sugar together.
Blend in the remaining ingredients.
Chill for several hours or overnight.
Shape/roll into 1 inch balls.
Bake at 400 deegre for 11 to 12 minutes.
Roll at once, while warm, in 1/2 cup confectioner's sugar.
Cool and then roll again in confectioner's sugar.
These are so simple and yet so special.

Russian Sugar Cookies

1 cup confectioners' sugar
1 tsp vanilla
1 cup oil
3/4 cup butter
1 tsp cream of tartar
2 eggs, beaten
1 tsp baking soda
4 cups plain flour
1 cup granulated sugar

Cream sugars, butter, and oil.
Add vanilla and beaten eggs. Mix well. Add baking soda, cream of tartar, flour.
Chill dough.
Roll out with granulated sugar Cut into desired shapes and bake on shiny cookie sheet for 12-15 minutes at 325°F.
