Sugar Free Xmas Cookies

1/2 cup milk
3 cups quick oatmeal
1 tsp vanilla extract
6 tbsps nestle quik  sugar-free instant chocolate milk mix
1 cup flaked coconut
1/2 cup margarine

In food prosessor or mixer bowl add sugar free quik, margarine, vanilla, and milk; blend until smooth.
Add oatmeal and coconut and blend until mixed together well.
On a cookie sheet place a piece of wax paper and take spoonful of the mixture and roll into a ball place close together.
Ready to eat in 1 hour.
Keep in the refrigerator.



Christmas Sugar Free Oatmeal Banana Cookies

3 ripe bananas
2 cups rolled oats
1/3 cup vegetable oil (I used olive oil)
1 tablespoon vanilla extract
1 cup raisins
nonstick cooking spray

Preheat oven to 350° deegree F.
Mash bananas in a large bowl. Stir in the rest of the ingredients and combine well.
Drop by teaspoonfuls onto a cooking sheet sprayed with baking spray.
Bake for 15 minutes or until lightly browned.



Sugar Free Rice Krispie Cookies

1 cup crushed Rice Krispies
1 cup sugar substitute
1 egg
1 1/2 cups Rice Krispies (not crushed)
1/2 tsp salt
1/2 cup butter, softened
1 cup whole wheat flour
1 tbsp vanilla
3/4 cup chocolate chips
2-3 tbsps water, if necessary
1 tsp baking powder

Beat softened butter, egg, vanilla and sugar substitute together until fluffy.
Combine crushed cereal, baking powder, salt, and flour, until blended.
Add to above mixture, adding water if necessary.
Add rest of cereal, and chocolate chips. Keep adding water if too dry.
Roll into balls, flatten, and place on cookie sheet at least 1 inch apart.
Bake in 375° deegree oven for 10 minutes.



Sugar Free Pudding Cookies

1 cup Bisquick
1/4 cup oil
1 (3 ounce) package sugar-free instant pudding mix
1 egg

Mix Bisquick and pudding.
Add beaten egg and oil.
Shape in balls and place on ungreased cookie sheet.
Push thumb into centre and add a dab of sugar-free jam.
Bake 350° F 6-8 minutes.



Chewy Coconut Bars - Christmas Recipe

1/4 teaspoon maple flavoring  
1/2 cup all purpose flour  
1 cup unsweetened coconut finely chopped
2 eggs
1/2 cup margarine melted  
1 t vanilla  
1 teaspoon baking powder  
1/2 c. chopped pecans
7 1/4 teaspoon Equal  
1/4 teaspoon salt  

Beat Equal, eggs, and maple flavoring mix in vanilla and margarine.
Combine flour baking powder and salt stir into egg mix.
Mix in pecans and coconut.
Spread in an 8-inch pan bake for 18-20 minutes at 350° F.
